The best way to prepare an orange for use in stir frys and salads is to remove the rind, pith, and seeds.  And all you need is a pairing knife.

Orange Preparation

Start by cutting a thick slice off top and bottom off of the orange.  Stand the orange upright and by following the contour of the orange cut off the peel and white pith.  Holding the fruit, remove the orange segments by cutting along the membrane separating each segment.  Finally cut each segment in half.
